How to choose the right rhubarb plants
Rhubarb is a popular and easy crop in many Danish gardens – and for good reason. A rhubarb plant is hardy, requires minimal care and delivers an early harvest that can be used in cakes, porridge, juice and much more. When choosing rhubarb plants, you should consider the variety's taste, color and harvest yield. Some varieties produce long, strong stems, others produce small and completely colored stems. When they are to be used in food, the oxalic acid content is important, it varies from variety to variety.
How do you grow rhubarb?
Rhubarb is one of the earliest vegetables in the garden. You can harvest the early varieties as early as April - this allows the early varieties to grow in peace while you harvest the late varieties.
Rhubarb grows from a tuber and needs periods of peace so that it can send nutrients down to the root. A well-established rhubarb plant can remain in the same place and be harvested for many years.
